I don't really have an answer for that. Limbs tend to get cut off and replaced ion Star Wars quite a lot, and I just though it might look cool. I want to leave in to the viewer to decide what they think may have happened.
There really is no reason why I gave her a cybernetic leg, other than thinking it might look cool. Luke, Anakin, Darth Maul, Grievous, Cad Bane, and a whole slew of other characters all have some kind of replacement parts, so I figured it would fit within the fictional universe well enough.
Perhaps she lost it (SPOILER ALERT!) in a fight with Barriss in an attempt to get revenge for betraying her. Or maybe it was chopped off by Anakin after she turned Dark Side. Being forced to dismember his own padawan would certainly help push him toward becoming Vader.
It is actually a pretty decent show. Not as good as the original trilogy, of course, but it is much closer to the light-hearted and campy tone than the prequel trilogy was. It isn't perfect, and it's canon is questionable, but it is exciting and well-written, and the animation is excellent. It's also nice to see the Clone Wars, since between AotC and RotS, they sorta just skipped over it.
